The frame is the big difference, the B5 is the original 350 frame. The C5 is an mid 2000 design. AFAIC, the G5 and B5s are the better frames. In fact, I wanted a B5 when I got the G5, but the C5s weren't in the shops yet. I bought the G5, which I was very happy with and B5s showed up two or three weeks later.

C5 uses 18" wheels and the B5 19".  C5 is a solo seat with the passenger pad on a removable sub-frame, while B5 uses the bench-style dual seat.

B5 gets my vote among the UCE-engined bikes.

You can change the bench seat for a solo seat and pillion pad later if you want that look.  I like the bench myself, more comfortable to me even though I think the solo looks cooler.  To each his own, right?  Customizing is half the fun.
You'll find many for sale that weren't ridden much.  People got them in mid life crisis or decided they really wanted more of a highway cruiser or something.  Mostly they just didn't really get into riding and, like you noticed, don't know what they actually have because they aren't bike people at all.
